No dairy Oatmeal Banana pancakes

What you need
1 very ripe banana
1 med ripe banana
1 egg
1 tsp vanilla
1 cup Almond milk
1 tbsp oil (I like avocado)
1 tsp salt
1.5 tsp cinnamon
1/4 cup Oatmeal flour (see bottom)
3/4 cup all purpose white flour
1.5 tsp baking powder
A non stick pan
What to do
Mash the very ripe banana until there's no lumps or very few don't obsess over it.
Add the egg and using a fork or whisk to blend egg with banana mush. Add the vanilla almond milk and oil mix until blended. Add the oatmeal flour and mix it in then let mixture sit for about a minute. In the same bowl add the flour cinnamon salt and baking powder then mix thoroughly
Slice the medium banana thin
Put your non stick pan in medium heat add about a tsp oil when the pan and oil are hot put a scoop of the pancake batter in the pan and press a couple pieces of the banana into the cake cook until bubbles for on the top (see pic) then flip and cook until brown
Oatmeal flour
To make oatmeal flour just add some whole oatmeal uncooked to your blender or food processor and blend to a fine powder

Shakshuka

Shakshuka is a delicious breakfast from Israel .... it's easy and you won't be able to get enough of it.

What do I need?
Onions, tomatoes (fresh or canned), eggs, salt, pepper and something spicy

Optional ingredients
Cilantro, chili powder, cumin powder, garlic.

Here's how to do it
put a non stick pan on medium heat add about 2 tablespoons of olive oil.
Chop a medium size onion into centimeter squares and add to your oil cook until the onion turns clear.
Chop the garlic as small as you can get it and add it with about a 1\2 teaspoon of salt 1 teaspoon of pepper 1 teaspoon chili powder 1 teaspoon cumin. Stir everything together and cook another 30 seconds or so.
(I also add a bit of sirachi dauce to spice it up its optional though)
Dice two medium to large tomatoes or add a half can of tomatoes and cook until the sauce becomes thick enough to make a hole in.
Make 4 to 6 holes in the sauce and crackin your eggs into them.
Cover the pan with a lid and cook until the top of the eggs has turned white.
(I like mine runny to dip my pita bread in)
Garnish with fresh chopped cilantro and serve woth pita bread or toast
